Rhubarb

3 stalks of rhubarb lurked in my kitchen after my visit to the farmer's market.

This morning I tried a new recipe: King Arthur Flour's Walnut-Rhubarb Muffins

It's a quick-bread recipe, but I baked muffins. I sprayed the muffin tins with oil, baked at 400° for 18 minutes.


The recipe called for cooked rhubarb to start, and suggested microwaving it....super easy and quick!


The muffins have a hint a lemon because they contain lemon zest.


Definitely yummy - even if you aren't inundated with rhubarb from your own garden just now.

Yum! I'll have to try these. DH doesn't care for rhubarb, but this looks like it might be a good way to sneak it into something without his knowing it :)

The muffin looks delicious and I'm certain it's jummy. I have to pick some rhubarb stalks in my kitchen garden to try it myself.

Looks like it tastes great! We don't have rhubarb here.
I have no clue if it would grow or not but the leaves are not good for animals and we have a lot of those around. I'll have to get my Mom to make something rhubarby next week! ;-)

I do think you could sneak the rhubarb by your husband in this recipe - especially since you can make it with strawberries and rhubarb. I don't love rhubarb....something about that texture....but it's very good in these muffins!

Theresa, If you're enticing your mom to make something rhubarby, does that mean your visit is back on the calendar??

This looks good, I'm feeling hungry! There are two big rhubarb plants in my garden, awaitng to be made into pies and jam.

Rhubarb pies, rhubarb jam, rhubarb coffee cake....all sound good. I'm practically ready to eat another muffin after reading all of your comments!

(Or break my gardening prohibition and plant rhubarb myself. I think it's easy to grow around here.)

It's interesting how many parts of the world it can grow in, but that dry areas are tough for it.

I learn a lot from you guys!
